Whenever I hear problems like that, the first thing that comes to mind is: rebuild your database. Quit Entourage, launch again, holding down the Option key.

If problems persist after the rebuild, write again.

Forgive my ignorance, but why is "rebuilding your database" such an issue with Entourage, and not with other clients? Is it the way Entourage stores its files? I've used Eudora for a few years and have never seen these issues. Whenever there is an issue, rebuilding seems to be the first area of concern. Is there a way to rebuild the database without restarting? What actions can one perform that will reduce the amount of rebuilding?
