If you’re using an Exchange Server, you can set this up using Outlook Web Access.  If you’re using a POP or IMAP account, you’d need to do this using rules, though it’s not a perfect method.  Check the Entourage Help Page to learn about how to set up the rule and the inconveniences associated with using it.
