Three ways:

A. Manual
1. Take a screen shot of your Entourage folder structure.
2. Make a new Entourage folder called "Archive", and a Finder folder on your
desktop called "Archive".
3. One by one, go to each Entourage folder. Make a new empty Entourage
folder of the same name plus in "Archive". It doesn't matter if you
duplicate the folder structure or not. Rename any (sub)folder with the same
name as a folder already there.
4. In each Entourage folder, with messages sorted by date, shift-click first
and last message of 2002 to select them.
5. Click Move button, and select "Move to folder" to move messages to the
subfolder of the same name in "Archive" Entourage folder. (Or you can drag
them, but you can lose some if there are more than 500 messages or so.)
6. Drag each subfolder of Entourage "Archive" separately to the desktop
"Archive" folder to make an MBOX file there.
[NOTE: This method 1-6 is MUCH more efficient than dragging thousands of
messages from Entourage to a desktop folder, and safer too.]
7. Repeat until done.
8. In the new Archive Entourage Identity, drag the MBOX files that were
top-level folders into "On My Computer", and if you have any IMAP accounts,
make a new local folder with the name of the IMAP account and drag _its_
top-level folder MBOXes into there.
9. Following the hierarchy map, drag MBOX files that were subfolders into
the correct folders you have made. Work your way through the structure
making no mistakes. When done, you will have reproduced your original
identity with just the 2002 messages.
10. Go back to your main identity. Delete the "Archive" folder. (If you
dragged any IMAP messages there, you have to delete them from their original
folders. If you used "Move" button, you won't need to.)

B. By script
If you get my "Export-Import Entourage X" script at

    MacScripter.net    <http://scriptbuilders.net/>

(shareware), the Folders Export and Folders Import scripts can do all of
this for you automatically, including recreating the folder hierarchy.
Choose to export all messages before Jan.1, 2003 and choose Archive (which
deletes the originals). The Import script will recreate the hierarchy. In
addition the "Convert Imports" script will restitute Sent Messages format
and re-establish the correct account for both received and sent messages ,
which no manual method can do (sent messages appear like received messages
and replies will go from your default account when you use manual method).
Other scripts in the package can recreate accounts, signatures, contacts,
etc, for you if you need them in the Archive identity. It's all pretty quick
and easy.
