At this point there is no way to type Hebrew text into an Entourage e-mail message.  I agree that support for right-to-left languages is important, and I encourage you to submit your feedback to Microsoft.  In Entourage X, go to Help -> Send Feedback on Entourage.  Otherwise, click on this direct link to enter Mac Product Feedback:

You can't even paste Hebrew text into Entourage and have it read properly on the other end.  This is what you end up with:
? ??????...

Pasting the same text into Apple Mail appeared properly.
