Thank you for answering. I was beginning to think my message went into a black hole :)

This is a real bummer. Aside from Mail, is there any other user-friendly Mail app that supports Hebrew text? This will be a deal breaker for her, so I am going to have to switch her from E’rage to something else (darn, just when she was getting the hang of it) and Mail is just not the answer for her.

You can't even paste Hebrew text into Entourage and have it read properly on the other end.  This is what you end up with:
? ??????...

Pasting the same text into Apple Mail appeared properly.
