The way to do that is to imitate what Entourage does for holidays: it gives every US Holiday both Holiday and Holiday - United States categories.

So if you have, say, six "subcategories" of Work (and maybe a few that are only Work, no subs), give them both categories. When you assign categories to  a new item, instead of selecting Work or Sub1 in the Categories list, select "Assign Categories" at the top of the list instead, to bring up the big Categories window. That lets you check off both apposite categories, plus select one of them and then   check "Primary" box at the bottom to decide which color should rule.  To get all your existing items set up like this, make a custom view of all the Items  which include  Calendar Events (or just use Address Book, Tasks List, Notes List, Message Folders for those items) , and sort by Category, Shift-click to select a category's worth, click anywhere below the header in Categories column and pick Assign Categories again, and apply the dual categories and Primary choice to the whole clump at once. Repeat for each of the six sub-categories.

You can't do it automatically, no - that's the whole point of having separate categories. But it's not too hard with a new item to open the Categories window and check two boxes instead of making one selection.
