I think a combo of links and the project center would help. >From Help: You can create a link from any Microsoft Entourage item to any other new or existing item or to a file on your computer. Creating links between items allows you to quickly find other relevant items without having to search for them. For example, if you schedule a meeting with someone in your Address Book, you can link that calendar event to the person's contact information and any messages you have exchanged, as well as to other relevant notes, tasks, or files on your computer. When you want to review materials prior to the event, you can view a list of all the items and files that are linked to it. You can then open the linked items directly from that list. A quick glance shows you which items in an Entourage list are linked to other items: Link appears in the Links column next to them. You can automatically link contacts in your Address Book with messages you either send to or receive from them.
