I suggest setting up TCPflow. You'll find the download and how to use info
here:

Basically, you install TCPflow (you don't see it), paste in the command

sudo /usr/local/bin/tcpflow -i en0 -c
  
Into the Terminal window.

To test, have Entourage make a connection and watch the traffic in the
Terminal Window.

Needless to say you don't want to run other applications that are connecting
to your network at the same time.
