I doubt these messages from PayPal, or whoever, are being composed in Entourage. You are probably receiving HTML mail composed in a Mozilla application such as Netscape mail or Thunderbird and probably from a PC; I know those emails would show up the way you describe. I don't think this can be done with Entourage. Try Thunderbird for the Mac and see if that works.
