It was my impression, perhaps false, that Cocoa apps have (easier?)
access to certain OS routines that might provide better performance,
particularly in the area of text rendering that this thread raised.
And that modifying and enhancing Cocoa apps is quicker and easier than
doing the same with Carbon ones.

If you know better, please correct me. I don't claim sure knowledge here.
