Because if you don't include file extensions - or even if you do any your recipients are using Mac OS 9 or other Classic OS - the Macs that receive the attachments need to have the Creator Code to know which app is used to open the file, or they will appear with no icon and won't open to double-clicking. Well, some will due to being registered in the File Exchange control panel in OS 8/9, but some won't. And without file extensions Mac OS X won't know what to do (nether will Windows, of course, and AppleDouble won't help there). I suppose you must always include extensions and rarely correspond with Mac OS 8/9 recipients.
