Verify where Entourage is looking for your Microsoft User Data folder.
Create a new Identity and name it something odd  (eg. qqark) so that a
search will only find the new identity. This should be in your ~/Documents
folder. The tilde (~) character here is UNIX shorthand for your home
directory.

I think some of your confusion is coming from your lack of understanding the
differences between the classic Documents folder and OS X's Documents
folder. I think you would be a lot happier if you could move to OS X only.

You can move everything in your Hard drive/documents/ to your Home/
Documents /.

You can have only one Microsoft User Data folder in the Documents folder,
but inside the Documents folder you can have folders for OE, Office 2002,
Office X and Office 2004. Identities is for OE. Louise I sent you a screen
shot off list.

Inside your 2001 Identities folder you can have multiple Identities. The
default one is named "Main". If you created one named qqark you will find it
there along with Main. Add your other 2001 Identities to this folder as long
as you rename them. Simply select the name in the finder and rename.

As far as backup goes. I suggest setting a task to remind you to back up
every xx days. Set your accounts to leave mail on server for the same amount
of time. This way if your database goes bad between backups, you can get
mail left on server. This won¹t get your sent mail though. Keep at least one
backup for archive purposes every month. Sometimes there is corruption that
is not caught until later.
