Shift-option-k will get you the Apple symbol in SOME fonts. NOT all. If it does not work in the font you are using, try Times, Helvetica, or one of the other fonts that was installed with your system.
I don't suggest using it in e-mail, since even simple quotation symbols seldom seem to come through correctly. I know that when I insert umlauts or French accents, even in HTML messages, they do NOT arrive as sent. Works fine for print, press or pdf, though.
