This is not a true "Archive" solution, but this works as a backup. You can drag any email from Entourage onto your Desktop (or into a folder). It is saved on the Desktop as an Entourage Email File. If you double-click it, it will open in Entourage. You could then delete the original email from Entourage's database. You can also drag that file from the Desktop back into Entourage's interface, thus adding it back into Entourage. You can also save an Entourage email as a text file. File -> Save As...
