My opinion is that plain text mail with an attachment is preferable to using HTML email with an embedded image, just to send the image. HTML email adds all sorts of overhead in sending, receiving and rendering. HTML email is fine when you need it, but ought to be reserved for when actually needed. I receive lots of oddly formatted HTML email that can not be readily copied or quoted until I use Entourage's Edit tool, thus removing the HTML. I think it would be nice if Entourage did display a preview of the attached image before sending a plain text message, or at least have a tool/command to "display attached image."
