If I may chime in here, I believe the issue is that you didn't actually
modify the original message on the server. From your description of things,
it looks like you have an Exchange account and that you are speaking of
messages in your Exchange Inbox. I don't have direct experience with
Exchange accounts, but I'm fairly confident that they behave as IMAP
accounts in this regard.

When you remove attachments from a message in a server-based mailbox, you
are only removing it from the locally cached copy of the message, *not* from
the original on the server. That is why when you "Get Info" on the mailbox
(indicating to me that this is not a local folder you speak of), it still
shows the original size.

Entourage will not allow you to edit the server copy of the message. If you
wish to save some space in your Exchange account, you will need to copy
those messages to a local folder (a folder in "Folders on My Computer") and
then delete them from the server-based mailbox. That will free up space in
your Exchange account. Once the messages are local, you can delete
attachments and it will really delete the attachment.
