My wife had a similar Crashing issue when we first got her new MacBook.
Entourage would hang/crash when the computer woke up from Sleep...

We added RAM, and all the hanging problems went away.

She does not experience any hanging/freezing/crashing of her new Entourage
'08.

We went from the as shipped 1gb to 4gb... cost about $100.

Not a thorough examination of anything, just an anecdotal bit of data.
