Christian:  Any of the three is as well made as your
EOS 1.  The 1v is certainly the strongest and best
sealed of the bunch, but the 1n is at least as good as
your 1, and Canon states that the 3 is exactly equal
to the 1n in terms of sealing.

The only piece on the EOS three that seems weaker than
on the 1n is the baseplate.  But the tripod socket is
still metal, and still attached to the internal
casting, not the baseplate.

As far a focus, they rank in order from newest to
oldest:  1v, 3 and 1n.  The 3 is significantly faster
than the 1n when using only 1 or 11 focus points.  I
think the 1v is only slightly faster than the 3.

In terms of controls I'd rank them the same:  1v, 3,
1n.

My advice: Compare features and price, and buy the one
that best suits your needs.  Don't worry about
ruggedness or reliability, as they are all very good.
