I think your first priority has to be to take the flash off the camera.
The OSCS2 is the perfect choice for that: it preserves all functions of
your flash (E-TTL, FEL, FEC, autozoom) and it's not very expensive. The
flash side has a flash socket thread and a tripod socket so you can
choose a support for it. (a little tripod, a flash bracket, your hand...
it's up to you :-)
Second, you may like to try first if Macro is your thing. (it can be
frustrating some times, and you woulnd't like to spend big bucks on it
just to find out that you don't like it).
I'd recommend you to start with some extension tubes or a close-up
filter. With the
extension tubes you gain magnification, loose some light and AF will be
almost impossible (you won't need it anyway); also your working distance
becomes reduced to a few cm/inches depending on how long the extension
is.
The extension tubes from Kenko are cheap and good enough. As they don't
contain any glass, the quality you get is that your lens provide. I have
no experience with close-up filters, but I'm sure others in the list can
help you with that.
If after those "learning" steps you're still interested in macro, then
go
for a good macro lens and enjoy it!
In relation with the flash bracket, Manfrotto makes one as you describe:
two 'wings' at each side of the camera and on top of that, the camera
support can be tilted up to the vertical position, so you keep your
flash on place while taking on vertical format.
Nevertheless, to use two flashes, either you use the TTL-distribution
system from Canon (Off Shoe Adaptor -3 + cables and accessories) that
only preserves TTL flash metering or you go for an upgrade to wireless
ETTL with either : 2x 550EX, 1 550EX + 1 480EX or 2 480EX + ST-2. (the
new 14EX ringlite can also be master ETTL)
Either option ain't cheap! (I'd opt for the wireless system since there
won't be any cables to hinder your work and you will be able to take
full advantage of the E-TTL system... (btw, I'm saving for it :-) ;-)
