Hi -
I'm using the Arca Swiss B1 with my EOS-3 (EF50mm F1.4; EF75-300 IS) as
well as medium format setup (Mamiya RB67). It's truly a dream with heavy
equipment. Very smooth, very safe, no danger of the dreaded "ball head
drop."
You will however need to get a separate QR plate for every piece of
equipment (3; BP-E2; 70-200L). The best place to get them is Really Right
Stuff:

Their custom made plates are *BEAUTIFUL* and extremely well designed and
manufactured. I have no complaints and you'll eventually get over the
wallet shock. RRS is a bit quirky in terms of how to order from them, but
they are a first rate operation. Ask for their catalogue, it'll answer all
your questions and more.
Kirk Enterprises also sells custom plates, but some people say their
quality is a little lower than RRS.
