I think what your asking is: Even if the camera can't
display the difference in exposure, does it correctly
adjust the actual shutter speed & aperture, or does it
use what is displayed?
The answer is, it depends.
If you're in manual mode, the camera will use the
aperture and shutter speed you set. Period.
In AV mode, the camera will use the aperture you set,
but adjust the shutter to the actual "correct"
exposure, even if that's a smaller increment than can
be displayed. Same for TV mode.
In P mode, both the aperture and shutter will vary in
smaller increments than can be displayed. There have
been a couple of attempts to measure the resolution of
the lens/shutter/metering system over the years. I've
read answers of from 1/6 stop accuracy to as fine as
1/10. Don't know what the correct answer is.
