No. All AI Focus does is decide whether to use One
Shot mode or AI Servo Mode, based on subject movement.
Once it switches to AI Servo mode, it's no different
than if you had selected AI Servo yourself.
As for constant rate vs. random rate motion, your
getting into predictive AF, which only work in AI
Servo mode (no matter how the camera gets into that
mode). And it only seems to work reliably with
subjects moving at a constant rate.

This is going to depend on your composition. If the
subject is centered in your viewfinder, you probably
want the center point. But if your subject is off
center, you'll want the appropriate AF point. When
shooting sports, I generally find it much easier to
select the center point and compose around that, but
it's certainly not mandatory.
