People are talking about two different things: 1. DEP mode This is a way to sample two points in the image, and have the camera determine the focus and the largest aperture that will get those points in "focus". It determines an exposure for you, and this is not shiftable on the high-end cameras for mysterious reasons. 2. Depth-of-field preview This a way to push a button and have the lens stop down.
