My own stash is EOS(1D, 1V, and an old 5), but my paper uses Nikon(F5,
D1x and D1h) so i use both systems every day.
Nikon, when they launched their matrix meterring system, realy did a
stroke of genius. The clue is, the matrix systems actualy meters the color,
and therfor not just asumes that everything has 18% grey. That's the
reason wgy so many claims that Nikons metering system i better. In my
experience,
it actualy wa, until Canon answered with the 1v, and were back in the
game.

Ken, 
ONLY the F5 meters the color as it uses a CCD to do that. All other Nikons
such as the F100, N70, N90, et al, 
use a system that divides and averages a pattern of measuring areas withing
the frame.
The main difference with Canon is that they do not include distance (with
Nikon D Lenses) in the metering algorithm as Nikon (and now Minolta with
their D lenses) does.
