First, I guess an introduction is in order.  Hi, I'm Eric.  I've been a
Canon user for four days.  Just bought and received a 1v.  Switched from
being a 10 year plus Nikon user.  It's the lenses.  And the digital...but
not yet.  

Is it possible to change how many exposures the 1v will take?

I'm assuming not since I don't find any mention of that in the manual or any
custom function about setting the film length.  If possible, I'd like it to
take 37 pictures on a 36 exposure roll.  Why?  For consistency more than
anything else.  :)  My other camera is a manual rangefinder, and I'd be a
happy camper if I had consistency in my negatives.  I do my own developing,
so having a lab mangle an image too close to the end isn't an issue.
