The newer 300 f2.8, 400 f2.8, 500 f4, and 600 f4 lenses have exactly that. They have "AF Stop" buttons ringed around the front of the lens. With CF 19 on a 1V, 1D, etc. you can change this button to toggle between One-Shot and AI Servo. In real life, though, I've found these buttons a little difficult to use consistently.
