When calculating GPH I don't use tach time. I use real elapsed time from my timer / chronometer. That way I obtain a GPH figure that truly allows me to calculate how much time I can plan to fly in real time, not in tach time.
Using tach time to calculate GPH would require me to use the tach as clock when flying, if I wanted to know how much fuel I have spent so far while in a particular flight...
