Nick,

During my flight training I learned GOOSE A CAT to remember mininum required 
Day VFR equipment:

Gas gauge
Oil pressure gauge
Oil temp gauge
Seat belts
ELT

Airspeed indicator

Compass - magnetic
Altimeter
Tachometer

For Night VFR we added APES:

Anti-collison light
Position lights
External power source (alternator or generator)
Spare fuses 

'Course for "FAA mandated instruments" for VFR flight I always refer to FAR 
91.205 (a) General, (b) Visual-flight rules (day), (c) Visual-flight rules 
(night).

As for transponders, I refer to FARs 91.215 and 91.413, but I always end up 
talking with an A&P/IA to understand what the FARs are telling me and if I 
really need one, or need to have it tested every 24 months, or not...
