There are a number of reasons why you might not, starting with the fact
that they probably have lower Isp. However, if there is no specific
reason why it's impossible, it is certainly worth considering.

That's probably a bad bargain, because that means the last of your ascent
fuel -- the part that you get the most benefit out of -- is being burned
inefficiently in low-Isp engines. Shutting down some of the big ones is
probably preferable.
