Could we simply say that we'll use the accents on the logo, but not in the text ?..
Yep -- that's my recommendation as well. We don't want the confusion that happened with NeXTSTEP (or NeXTStep or NeXTstep or ...?) on case to happen with us on accents. I suggest no accents anywhere on the site or any other communication, so that we can remain internally consistent and not have to make people hunt for accent marks when writing about the software. Also, it should always be referred to as "Etoile", with the first letter capped and the rest lower.
