I really like proposals 1 and 3… For the both because they use fonts
with strong and interesting personality, more specifically for the
first one because it reflects well the organic nature of Étoilé with
the leaf and its components nature when you look at the little
constellation.
For proposal 3, it looks may be a bit too much "corporate" or
enterprise" oriented. For proposal 1, I'm not sure it is really
important to know it's a flower, the live plant inspired shape is
what is important imho, but I understand Nicolas point about it (it
looks somewhat mysterious ;-).
I don't really like proposal 2 because the font is too much
impersonal in my opinion and the direct star symbol use is too much
illustrative. I have similar objections for proposals 4, 5, 6.
I would prefer we try to push farther concept 1 or 3 and may be we
avoid any star symbol use in the logo unless a really audacious
concept is found with this symbol.

In proposal 2, the star stands out because the san-serif font has
less personal.

Font personality is not related to serif or san-serif quality. I would rather say that it is the combination of both its design and its public exposure. For example, fonts like Times, Helvetica, Arial or here Tahoma have no personality anymore (at least used alone) because they have been overused and are still (it can be true for less known fonts like Meta or DIN used a lot by graphic designers). In my opinion, they are exceptions to this rule like Bodoni or Optima because they have a very particular identity.

Meta : <http://www.fontshop.com/index.cfm? fuseaction=verity.search&font_categories_search=font_name_search&searchs tr=meta&image.x=0&image.y=0> Din : <http://www.fontshop.com/index.cfm? fuseaction=verity.search&font_categories=1&font_categories_search=font_n ame_search&searchstr=din>
Bodoni : http://www.linotype.com/170/bodoni-family.html
Optima : http://www.linotype.com/1305/optima-family.html

If other serif fonts are used, the star will not be obvious.
But the accent of sen-serif font are not good-looking.

Serif or san-serif isn't a strict charateristic, many fonts are hybrid or are declined in both serif and san-serif. Interesting examples are Rotis, Officina or Arbitrary… As a side note, I'm a fan of Rotis (but it works too well in many cases, so it's a choice a bit easy ;-)
Another good example is Sun font designed for the well known company.

Officina : http://www.linotype.com/6-1826-6/itcofficinasans.html
Arbitray : http://www.emigre.com/catalog.php?cat=TM04&page=2

If people like the proposal 1, I would suggest to make it a leaf
instead of flower,
simply because it is more recognizable.

Or something like a house plant.

cheers,
Quentin.
