X will probably appear slower on the G3 than 9.

You don't install 'classic' mode, you have 9 installed, then install X.
If you don't want to run classic, you don't have to .  Classic will be
there for when you do want to run 9 apps.

Classic is almost like an OS Emulator, but it's not.  (there could be
arguments either way.)
Classic runs in it's own space on X, some apps supposedly run faster in
X.
    
In theory, a classic app will only bomb Classic and not affect X; in 9,
when an app crashed it could bring down the whole machine. (macs version
of BSOD)
