Use PVC and make sure you glue the joints well if you plan to run it outside. Metal is ok too except it's harder to seal.
Cat5e boxed cable comes in 1000 foot boxes usually, and it's almost always solid wire. The only time you are likely to see stranded is for patch cables (flexing service).
