I definitely recommend creating an account for her. That will cure the
Firefox problem and the not liking it when you change the settings
problem.
I don't often use Ubuntu, but I would be surprised if there isn't a nice
friendly GUI for creating users. If you can't find it, open a terminal
window, "sudo -s", and read "man adduser".
As for mail...do you read your mail from a remote mail server? If so,
then you won't have to give her any special access to your files...just
configure her mail reader with the same settings as your mail reader, and
she'll be ready to go.
If you don't use a remote mail server (i.e. the Internet delivers mail
directly into your local machine), then I recommend setting up an IMAP
server on your local machine. Then she can read your mailbox through the
IMAP server, and it works just like the remote server case.
