I do not know nor have racing experience (the above people do):
-If the before conversion and after conversion weight were the same, and
using a racing controller and motor of the proper design, then after
conversion to electric, the acceleration will be better than when it was
an ice.

-As far as using a single gear, it would need the gear ratio to be
designed for optimum use at the lowest and highest speeds of the race
tracks you will be driving on.
