That's a good idea for many people. The same is true for replacing a
furnace/air conditioner with a heat pump.

However, I should mention a couple details that are often overlooked. (I
worked for Robertshaw on water heater controls for years).

1. Standards have changed. Even the cheapest water heaters now have
significantly more insulation than they used to.

2. The "waste" heat from a water heater isn't always wasted. If the
water heater is in your basement or upstairs closet, it heats that area.
This is often helpful for taking the chill off and lowering the humidity.

3. If you live in a place that rarely needs air conditioning (like me,
in Minnesota), you heat the house a lot more than you cool it. There is
no energy savings if the furnace and water heater are both powered by
the same fuel (gas or electric) during heating season.

4. Tankless demand heaters (that only heat the water when it is actually needed) are more efficient that anything you can do with a tank-type water heater, regular or hybrid.
