First off, I'm not very knowledgeable about the Bolt, but modern vehicles
including many ICE vehicles now have 12v charging systems that are much
more complex and many monitor the current (coulomb counting) of the 12v
battery.   So if you connect loads directly to the 12v battery, you can
make whatever software is monitoring the charging system believe the 12v
battery is failing.   It will see the extra amp hours out and not back in
as a battery with internal loads (sulfation) and could result in warning
lights, or even damage to the 12v battery from overcharge/undercharge.

I know there's quite a few Tesla owners who found out the hard way that
connecting large loads such as inverters to the 12v battery can cause
warranty issues and can be responsible for out-of-pocket costs.

On most EVs, there's going to be some way to derive 12v safely for extra
accessory loads, but I can only comment on Teslas with expertise.
