I had to perform the same thing at my last job I was at.

Basically what I did was exmerge everyone's mailboxes out to a share
that both networks could see.  

I then installed the new server within it's own site and then exmerged
all the mailboxes back into that site.  Make sure though that DN's match
the mailboxes that you exmerged to the mailboxes you created within your
new site.

This might not be the best way to do it.  But that's how I got it done.
And it worked fine.

That information is lacking because the feature is not available as far
as I know.  You're going to want to start looking at Exmerge or a
third-party product.

We will be migrating from 5.5 to 2000 next month which is pretty
straightforward.  The caveat with our company since we have a parent
company is becoming a site in their organization during the upgrade
process.  Having a tough time finding info on becoming a site in a
different organization during the build out of the first Exchange2K
server and being able to still use the move mailbox method to migrating.
