Interesting thread to read so far. We have used VPC for years. Since Connectix was VPC. With that said though we have ALWAYS used it on our Macs in house to help with those "Win32 only" apps.
I have been considering the idea more and more of using it as a "testbed" so its interesting to see these comments. I use it here(MS virtual PC) it's very cool and perfect for testing, with the hardware that you have, you could run several VPC.
