I see what you're saying. I just don't think Outlook has the features that you're looking for out of the box.
Are we getting that lazy when we have to do an extra mouse click to get to something? Her calendar and the two executive's calendars all appear in the pain on the left. By default, only the Admin's calendar is displayed she has to select the other two each day and and deselect her own. By doing this go to the user she needs access to and grant the user rights that she needs for only the calendar. That way when she opens the mailboxes up she can only view the calendar of that person's mailbox.
