Thanks for the info guys. The user in question wasn't complaining, she just wanted to know if she could save those settings. It's more of "this would be a nice feature" than "I am too lazy to do this each day".

By default, only the Admin's calendar is displayed she has to select the other two each day and and deselect her own. By doing this go to the user she needs access to and grant the user rights that she needs for only the calendar. That way when she opens the mailboxes up she can only view the calendar of that person's mailbox.
