We have install Entourage with Exchange, I have to say it's not that great. Certainly not the integration wonderland MS suggested it would be.
It uses OWA for public folder iirc too. Try using the ip address instead of the server name. Make sure the macs are using a dns server which has your .local entry. There are several patches to Entourage available. I have never had any success using the server name alone.
