I don't think you can do an inplace downgrade so I would swing it out to a temporary Exchange 2000 server, wipe the original machine reinstall and then swing it back. You will still have the Exchange 2003 forestprep and domainprep results - but those cannot be reversed and shouldn't do any harm.
