What's the reason for using a different organization?  Things are much
easier if you join the new server to the original Exchange organization.

In most cases moving mailboxes between two servers that are in the same
organisation is very easy. As long as the two servers are both alive, when
Outlook connects to the old server it will automatically redirect to the new
server. Magic. No utility required.

However if it is separate domains then it becomes a lot more complex.
