we have the same setup here except we're using version 4.0 of symantec mail security and we don't disable anything before nightly backups, though we don't have much data on these servers (we're still using e2k for mailbox servers, we only switched to e2k3 for connector and front-end servers do far). Having to disable your AV before doing backups everytime is something that would make me look for a new AV product.
