I don't know why I read over the MIME part, but I did.  You can create a
separate SMTP Connector and in the address space specify just that
particular recipient's domain and configure it to send UUENCODE.

This is no solution.

This will just mail a plaintext mailt, but leave it MIME encoded.

He needs to configure the receiving domein as to send mail UUENCODE as per
previous link. UUENCODE is really really old. MIME is supported on just
about all mail clients. Recipient really should upgrade to a newer client.
