Yes, while the method of replicating stores in this fashion is unsupported, plenty of people do it with great success (I am one of them).
As for the original question with mounting the stores on the opposite server, your vendor is largely correct, but the process can be automated. I use Double-Take for my exchange replication and NSI provides a custom failover app that does all the work necessary to take your secondary server, using a secondary name, and be able to mount stores on it. The process is basically the same as what you need to do manually, but the EXE does it for you. Plus, if it goes south, NSI support will help you fix it, as it's their app that broke it.
