You might check out http://www.ontrack.com; their product might be able to
help you.

The alternate server thing doesn't have to be hard.  All you really need to
do is bring up a new domain controller in your production domain, remove it,
take it to your off-network lab, bring up DNS and seize the roles and you
have a clone domain.  Then you can install Exchange and restore.  Of course,
when you're done, don't put that DC back on your production net--wipe it
clean!

I have Exchange 2003 with 2 servers in the same site.  Public folders are
set to be on one server only (no replication).  An incorrectly applied
policy wiped out information in several public folders that was older than a
certain date and needs to be recovered.  Unfortunately, this was not
discovered timely enough that we can just restore
(overwrite) the public information store.  The same policy had deleted item
retention on these folders, but nothing shows up when I try recover deleted
items on the public fodlers (have ownership permissions, etc).

I have researched and found information on recovering public folders.
It appears my options are to restore over the existing public folder store
(which would lose changes that happened since then) or restore to another
server in a different forest (which is a bit of work for us, as we'd have to
create the new domain and everything else).

What I'm wondering is there any other strategy I could employ here (for
example, possibly employing the other Exchange Server which does not have
any public folders)?  Is it possible that the items removed through the
policy are still recoverable through some other mechanism?  Any help,
pointers, or suggestions would be greatly appreciated.
