Double-Take (and I assume XOSoft's product) run as a service in the OS on machines you deplicate machine. They then communicate via TCP/IP and a specific port. There's no reason that it shouldn't work on VMWare/Virtual Server. NSI/XOSoft may not provide official support however.
FWIW - I use Double-Take for 2 SQL 2000 servers and 1 Exchange server. I've actually used my Double-Take replicated data to migrate to a brand new SQL server. This was done as follows: Stopped SQL Servers on original server, Renamed original server, Loaded new server, and named it same as original server, Moved double-take replicate data from replication server to proper locations on new server (exactly matching DB paths), fired up the new server's services and rebooted. Worked perfectly. Now, I've never done an Exchange failover. It uses a customized .EXE that NSI provides.
