Two other places to look for vanished email: Antivirus. If the missing pieces are not in quarantine, you may have to turn off or even uninstall AV to see if the phenomenon goes away. Do you by any chance use Norton Mail Security?
Outlook Today. Messages can end up in that folder, and won't be visible unless you turn off the home page attribute. The only thing I noticed is that the time stamp on the Exchange side is like 30 some mins different then the time stamp of the actual message sent out. I know this because one of the users who received the message forwarded to the user in question. Outlook is running live mode.
